Celebrate Father’s Day with brunch
We often think of brunch for Mother’s Day, but why should Dad be left out? Serving brunch is a great way to celebrate Father’s Day. Afterwards, he can spend the rest of the day the way he wants—by watching sports, going for a hike, or napping away a spring day.

1 8-ounce package refrigerated crescent rolls
12 strips bacon, cooked and crumbled
1 cup frozen shredded hash brown potatoes
3/4 cup shredded Cheddar cheese
4 eggs
2 tablespoons milk
1/2 cup grated Parmesan or Romano cheese
Preheat oven to 375 degrees; grease a 13×9-inch baking pan. Unroll crescent dough into one long rectangle. Press onto the bottom and 1/2 inch up the sides of the pan. Seal seams and perforations. Sprinkle evenly with bacon, potatoes, and cheddar cheese.
In a bowl, beat eggs and milk. Pour over cheddar cheese. Sprinkle with Parmesan cheese. Bake, uncovered, until eggs are completely set, about 25 to 30 minutes. Makes 8 servings.

1 medium green pepper, chopped
1 small onion, chopped
2 tablespoons vegetable oil
3 medium potatoes (about 1 pound), peeled, cooked and diced
1 cup diced cooked steak
1/4 to 1/2 teaspoon garlic powder
Salt and pepper to taste
1/4 cup shredded Monterey Jack cheese
4 eggs
In a large skillet over medium heat, sauté the green pepper and onion in oil until tender, about 3 to 5 minutes. Stir in potatoes. Reduce heat; cover and cook over low heat for 10 minutes or until the potatoes are heated through, stirring occasionally.
Add steak, garlic powder, salt, and pepper. Sprinkle with cheese. Cover and cook on low until cheese melts, about 5 additional minutes; keep warm. Fry or scramble eggs as desired; divide hash among four plates and top with an egg. Makes 4 servings.

6 English muffin halves
2 tablespoons butter
1 pound fully cooked smoked sausage, cut into 1/2 inch slices
6 eggs, fried
3 slices American Cheese or cheddar cheese, halved
Preheat oven or toaster oven to broil. Spread 1 teaspoon butter on each muffin half. Place smoked sausage slices on buttered halves. Broil until sausage is heated. Top each with a fried egg and halved cheese slice. Return to broiler or toaster oven until cheese melts. Makes 6 servings.

Pantry Pointers
To give the family a chance to make brunch a surprise, bring Dad coffee and a newspaper in bed to keep him out of the kitchen.
