Use these tips for sirloin
Sirloin tips have a texture that makes it taste like it cooked for hours, even when they are cooked less than an hour. If you can’t find meat specifically labeled as sirloin tops, try looking for beef tenderloin or top sirloin and cut it into cubes before cooking.

Pantry Pointers
When choosing sirloin, meat labeled top sirloin is the most tender. Bottom sirloin is more readily available but is less tender. Bottom sirloin is good for roasting or marinating.
